Ingredients
  

For the Apple Filling
  • 6 medium-sized medium-sized apples (preferably Granny Smith or Honeycrisp) Choose firm, tart varieties for the best texture.
  • ¾ cup granulated sugar
  • 2 tablespoons all-purpose flour This thickens the filling.
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 2 tablespoons unsalted butter, cut into small pieces Dot over the filling.
For the Cobbler Topping
  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • ¼ cup brown sugar, packed
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 6 tablespoons cold unsalted butter, cubed Cut in for a crumbly topping.
  • ¼ cup boiling water Add to mix the topping.

Method
 

Preparation of Apples and Filling
  1. Preheat oven to 375°F (190°C) and lightly butter a 9x9-inch baking dish or 10-inch cast-iron skillet.
  2. Peel, core, and thinly slice apples to ¼-inch thick.
  3. In a large bowl, toss apples with ¾ cup sugar, 2 tablespoons of flour, lemon juice, cinnamon, nutmeg, and salt until evenly coated.
  4. Pour the mixture into the prepared dish and dot with butter pieces.
Make the Cobbler Topping
  1. In a separate bowl, whisk together flour, granulated sugar, brown sugar, baking powder, and salt.
  2. Cut in cold butter using two forks or a pastry cutter until the mixture is crumbly.
  3. Add vanilla extract and ¼ cup boiling water; stir until a thick, sticky batter forms.
Assemble, Bake, and Serve
  1. Drop spoonfuls of topping over the apple filling, leaving small gaps.
  2. Bake for 45–50 minutes until the top is golden brown and filling is bubbling.
  3. Cool for 15 minutes before serving to allow juices to thicken.

Notes

For a sweeter cobbler, substitute apples with Honeycrisp. For a gluten-free version, use a 1:1 gluten-free flour blend.
