Ingredients
  

Base Ingredients
  • 1.75 cups Plain 2% Greek Yogurt
  • 4 large Eggs (room temp)
  • 2.5 cups All-Purpose Flour
  • 0.25 cup Ground Flaxseed
  • 1 tbsp Baking Powder
  • 2 tsp Salt
  • 1 tsp Garlic Powder
  • 0.5 tsp Red Pepper Flakes (optional) Use if you want a bit of spice
Mix-Ins
  • 1.5 cups Spinach, wilted & squeezed dry
  • 0.5 cup Chives, chopped
  • 1.5 cups Cheddar Cheese (½ cup reserved)
  • 2 cups Diced Ham
  • 2 cups Cooked Italian Chicken Sausage, crumbled
  • 0.5 cup Sun-Dried Tomatoes, chopped
  • 1.5 cups Feta (½ cup reserved)
  • 2 tsp Dried Basil (or ¼ cup fresh, added after baking)

Method
 

Preparation
  1. Preheat oven to 375°F (190°C) and line a baking sheet or grease a muffin tin.
  2. In a large bowl, whisk yogurt and eggs until smooth.
  3. Stir in the flour, flaxseed, baking powder, salt, garlic powder, and red pepper flakes until just combined.
Add Mix-Ins & Shape
  1. Fold in your chosen ingredients — either ham and cheese or Mediterranean mix-ins like spinach, sun-dried tomatoes, feta, and basil.
  2. Scoop about ⅓ cup of dough for each biscuit onto the baking sheet or into muffin wells.
  3. Sprinkle a little reserved cheese or feta on top.
Bake & Cool
  1. Bake for 25 minutes, or until golden and firm.
  2. Let cool for 10 minutes before serving.
  3. Enjoy warm or store for later use as a quick savory snack.

Notes

Store any leftover biscuits in an airtight container in the refrigerator for up to 5 days. You can also freeze them for up to 3 months. Just reheat them in the oven for a few minutes when you’re ready to enjoy!
