Main Ingredients
  • 2 pounds chicken breast (or any meat of choice)
  • 1 can cream of mushroom soup Can substitute with cream of chicken or cream of celery.
  • 1 cup low-sodium chicken broth
  • 1 packet seasoning mix (like ranch or taco) Feel free to use different seasoning mixes.
  • 4 cups mixed vegetables (frozen or fresh)

Method
 

Preparation
  1. Place the chicken breasts in the bottom of the crockpot.
  2. Pour the cream of mushroom soup and chicken broth over the chicken, then sprinkle the seasoning mix on top.
  3. Add the mixed vegetables.
Cooking
  1. Gently stir everything together, then cover and cook on low for 6–8 hours or high for 3–4 hours, until the chicken is fully cooked and tender.
Finishing
  1. Shred the chicken with two forks, stir it back into the sauce, and serve warm.

Notes

This dish is best served hot with rice, mashed potatoes, or crusty bread. Pairs well with a green salad. Store leftovers in an airtight container in the refrigerator for up to three days or freeze for up to two months. Searing the meat beforehand adds extra flavor.
