  • 1 cup almond milk (or any milk of choice) Use any milk preference: dairy, soy, or coconut milk.
  • 1 tablespoon maple syrup (optional) You may adjust the sweetness or use honey/agave syrup.
  • 1/2 teaspoon vanilla extract
  • to taste fresh fruit for topping Add any fresh fruits as desired for topping.

Preparation
  1. In a bowl, combine chia seeds, almond milk, maple syrup, and vanilla extract. Stir thoroughly to mix.
Setting
  1. Let the mixture sit for 5 minutes, then stir again to break up any clumps. Cover and refrigerate for at least 2 hours or overnight until thickened.
Serving
  1. Give the pudding a final stir before serving and top with fresh fruit as desired.

Notes

Chia seed pudding can be layered in a glass with fruit or nuts for added texture. Store leftover pudding in an airtight container in the fridge for up to five days. Stir before serving again.
