Preparation
  1. Place the chicken thighs in the crockpot, then layer the diced potatoes, chopped carrots, and onion on top.
Cooking
  1. In a bowl, combine chicken broth, minced garlic, thyme, salt, and pepper. Pour this mixture over the ingredients.
  2. Cover and cook on low for 6–8 hours or high for 4–5 hours, until the chicken and vegetables are tender.
Serving
  1. Shred the chicken with two forks, stir it back into the crockpot, and serve warm for a hearty, comforting meal.

Notes

For a richer flavor, brown the chicken thighs in a skillet before adding them to the crockpot. Feel free to add other vegetables like green beans or bell peppers. Adjust the seasoning for your taste—add more thyme or some rosemary for extra flavor.
