  • 8 oz cheese tortellini
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream Substitute with half-and-half for a lighter version
  • 2 cups spinach Fresh spinach is recommended
  • 1 carrot, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for serving Freshly grated recommended

Method
 

Preparation
  1. In a large pot, sauté onion, carrot, and garlic over medium heat until softened and fragrant.
Cooking
  1. Pour in the broth and bring to a simmer. Add the tortellini and cook according to package directions until tender.
Finishing
  1. Stir in the heavy cream and spinach, cooking until the spinach wilts. Season with salt and pepper, and serve hot, topped with Parmesan cheese.

Notes

For added flavor, consider using homemade broth. Feel free to add in other vegetables such as mushrooms, zucchini, or bell peppers for more nutrients and flavor. Store leftover soup in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave.
