  • 1 packet ranch seasoning mix
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream (or half-and-half)
  • Salt and pepper to taste

Method
 

Preparation
  1. Peel and dice the potatoes, then place them in the crock pot.
  2. Sprinkle with ranch seasoning, add shredded cheese and crumbled bacon on top, and pour in the broth to cover everything.
Cooking
  1. Cover and cook on low for 7–8 hours or high for 4 hours, until the potatoes are tender.
Finishing
  1. Stir in heavy cream, season with salt and pepper, and blend with an immersion blender for a smoother texture if desired.
  2. Serve with extra cheese, bacon bits, or chopped green onions.

Notes

For more flavor, consider adding garlic or onion to the pot. Use a variety of potatoes like Yukon Gold for a different texture. If you prefer a thicker soup, blend a portion of the potatoes using an immersion blender. You can add vegetables like corn, broccoli, or bell peppers for enhanced nutrition and flavor. For a vegetarian version, use vegetable broth and skip the bacon.
