Ingredients
  

Main Ingredients
  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 2 cups shredded cheese
  • 1 cup salsa
For Serving
  • Tortilla chips (optional) For serving

Method
 

Prepare Beef
  1. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
Combine & Cook
  1. In the slow cooker, mix the cooked beef with black beans, kidney beans, corn, diced tomatoes, taco seasoning, and salsa. Stir to combine.
  2. Cover and cook on low for 6–8 hours or high for 3–4 hours.
Finish & Serve
  1. About 15 minutes before serving, sprinkle shredded cheese on top and cover until melted.
  2. Serve hot with tortilla chips if desired.

Notes

For extra flavor, consider adding chopped onions or peppers when cooking the ground beef. For spice, add diced jalapeños or hot sauce. Ground beef can be substituted with ground turkey or chicken for a healthier option. Experiment with different types of cheese for a unique twist.
