Ingredients
  

For the shrimp
  • 1 pound large shrimp, peeled and deveined
  • 2 cups cooked white rice (jasmine or basmati)
For the garlic butter sauce
  • 4 tablespoons butter
  • 1 tablespoon olive oil
  • 5 cloves garlic, minced
  • 1 lemon juice + zest
  • 2 tablespoons fresh parsley, chopped
  • ½ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste

Method
 

Cooking the Shrimp
  1. Heat olive oil in a large skillet over medium-high heat. Season shrimp with salt and pepper, then cook 1–2 minutes per side until pink and opaque. Remove and set aside.
Making the Garlic Butter
  1. Reduce heat to medium. Add butter and garlic to the same pan. Cook for 30 seconds until fragrant.
Combining and Serving
  1. Return shrimp and cooked rice to the pan. Toss to coat with the garlic butter sauce.
  2. Add lemon juice, half the zest, parsley, and red pepper flakes if using. Serve immediately with remaining zest on top.

Notes

Do not overcook the shrimp — they only need a few minutes. Use room-temperature rice so it mixes easily. Fresh lemon juice makes a big difference in flavor.
