  • 1 lb lean ground beef (93% preferred)
  • 2 medium sweet potatoes, peeled and diced
  • 1 avocado, sliced
  • 1 cup cottage cheese (low-fat or full-fat)
  • 1 yellow onion, diced
  • 2 tbsp olive oil
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 2 tbsp hot honey (store-bought or homemade)
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • Salt and pepper to taste

Preparation
  1. Preheat oven to 400°F (200°C). Toss diced sweet potatoes with 1 tbsp olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread on a baking sheet and roast for 40-45 minutes, stirring halfway through.
  2. In a skillet, heat the remaining olive oil. Add diced onion and cook until softened. Stir in the ground beef, season with taco mix, and cook until browned and flavorful.
  3. Layer roasted sweet potatoes, ground beef, sliced avocado, and cottage cheese in each bowl. Drizzle with hot honey and garnish with cilantro, red pepper flakes, and lime wedges if desired.

Notes

For extra flavor, consider marinating the ground beef in the taco seasoning for 30 minutes before cooking. You can easily swap out the sweet potatoes for other roasted vegetables like butternut squash or carrots. Adjust the amount of hot honey based on your spice preference—more for a kick, less for a milder flavor.
