Method
Cook the Meats & Aromatics
- In a large pot, heat olive oil over medium heat.
- Add chopped bacon and cook until crispy.
- Stir in the Italian sausage, breaking it apart as it browns.
- Add diced onion and cook for about 5 minutes.
- Stir in minced garlic and cook for 1 more minute.
Build the Soup Base
- Pour in the chicken broth and bring to a boil.
- Add cannellini beans, spinach, and oregano.
- Season with salt and pepper to taste.
Simmer & Serve
- Reduce heat and simmer for 15–20 minutes until the flavors blend together.
- Serve hot, optionally topped with grated Parmesan or crusty bread on the side.
Notes
Store any leftovers in an airtight container in the refrigerator for up to 3 days. For a creamier soup, add a splash of heavy cream or a dollop of sour cream before serving. Use different greens like kale or Swiss chard if you prefer.
