  • 2 pounds ground beef Use lean ground beef for a healthier option.
  • 1/2 cup almond flour Gluten-free alternative to breadcrumbs.
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon Italian seasoning For added flavor.
  • 1/2 onion chopped
  • 1/2 green pepper chopped
  • 2 large eggs
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • 1/2 cup no sugar added ketchup Spread on top before baking.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a small bowl, combine almond flour, parmesan cheese, and Italian seasoning.
  3. In a large bowl, mix ground beef, chopped onion, green pepper, eggs, Worcestershire sauce, garlic powder, pepper, salt, and the almond flour mixture until evenly combined.
Baking
  1. Line a sheet pan with foil.
  2. Shape the meat mixture into a loaf and place it on the prepared pan.
  3. Spread the no-sugar-added ketchup evenly over the top.
  4. Bake for 45–55 minutes, or until the internal temperature reaches 160°F (71°C).
  5. Let the meatloaf rest for a few minutes before slicing and serving.

Notes

Serve with a side of green vegetables or a fresh salad. Store leftovers in an airtight container in the fridge for up to 4 days or freeze individual slices for up to 3 months. For extra flavor, consider adding your favorite herbs or spices into the meat mixture.
