Main Ingredients
  • 2 pounds ground beef Use lean ground beef for a healthier option.
  • 1/2 cup almond flour Substitutable with coconut flour, use less as needed.
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon Italian seasoning Add more herbs for extra flavor.
  • 1/2 onion chopped
  • 1/2 green pepper chopped Feel free to add other veggies like mushrooms or zucchini.
  • 2 whole eggs
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • 1/2 cup no sugar added ketchup For serving.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). In a small bowl, combine almond flour, parmesan cheese, and Italian seasoning.
  2. In a large bowl, mix ground beef, chopped onion, green pepper, eggs, Worcestershire sauce, garlic powder, pepper, salt, and the almond flour mixture until evenly combined.
Shaping and Baking
  1. Line a sheet pan with foil and shape the meat mixture into a loaf, placing it on the prepared pan.
  2. Spread the no-sugar-added ketchup evenly over the top.
Cooking
  1. Bake for 45–55 minutes, or until the internal temperature reaches 160°F (71°C). Let the meatloaf rest for a few minutes before slicing and serving.

Notes

Serve with green vegetables or a fresh salad. Can also be paired with cauliflower mash. Store leftovers in an airtight container for up to 4 days or freeze individual slices for up to 3 months. To keep it moist, avoid overmixing the meatloaf mixture.
