Preparation
- Preheat the oven to 350°F (175°C). In a small bowl, combine almond flour, parmesan cheese, and Italian seasoning.
- In a large bowl, mix ground beef, chopped onion, green pepper, eggs, Worcestershire sauce, garlic powder, pepper, salt, and the almond flour mixture until evenly combined.
Shaping and Baking
- Line a sheet pan with foil and shape the meat mixture into a loaf, placing it on the prepared pan.
- Spread the no-sugar-added ketchup evenly over the top.
Cooking
- Bake for 45–55 minutes, or until the internal temperature reaches 160°F (71°C). Let the meatloaf rest for a few minutes before slicing and serving.
Notes
Serve with green vegetables or a fresh salad. Can also be paired with cauliflower mash. Store leftovers in an airtight container for up to 4 days or freeze individual slices for up to 3 months. To keep it moist, avoid overmixing the meatloaf mixture.
