  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 15 oz can tomato sauce
  • 14.5 oz can diced tomatoes
  • 4 cups beef broth
  • 2 cups uncooked pasta (like mafaldini or similar)
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil for garnish

Method
 

Cook Beef & Vegetables
  1. In a large pot, brown the ground beef over medium heat. Add chopped onion and garlic, cooking until softened and fragrant.
Build Sauce & Cook Pasta
  1. Stir in tomato sauce, diced tomatoes, beef broth, and Italian seasoning. Bring to a boil, then add the uncooked pasta. Reduce heat and simmer for about 10 minutes, or until the pasta is tender. Season with salt and pepper to taste.
Add Cheese & Serve
  1. Stir in ricotta cheese until melted and creamy. Serve hot, topped with shredded mozzarella and fresh basil for garnish.

Notes

For a vegetarian version, replace the ground beef with lentils or your favorite meat substitute. You can also add veggies like spinach or zucchini for extra nutrients. Adjust the spices according to your taste, adding more Italian seasoning or red pepper flakes for heat. If you prefer a creamier soup, add more ricotta cheese or some heavy cream.
