Preparation
- Preheat the oven to 375°F (190°C) and grease or line a 12-cup muffin tin.
- In a large bowl, mix ground beef, breadcrumbs, onion, milk, beaten egg, ketchup, Worcestershire sauce, salt, and pepper until just combined. If desired, fold in cheese.
Baking
- Divide the mixture evenly among the muffin cups, filling each about two-thirds full.
- Bake for 20–25 minutes, or until the internal temperature reaches 160°F (71°C) and the tops are nicely browned.
Serving
- Allow the meatloaf muffins to rest in the tin for a few minutes before removing.
- Serve warm with your favorite sides.
Notes
These muffins can be served hot or at room temperature. Great paired with mashed potatoes, steamed vegetables, or fresh salad. For extra flavor, add ketchup or BBQ sauce on top. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days or frozen for up to 3 months.
