Main ingredients
  • 1 lb Boneless Chicken Breasts/Thighs Thighs for richer flavor, breasts for a leaner option.
  • 2 cups Corn Fresh grilled, frozen, or canned corn.
  • 4 oz Cream Cheese Can use vegan alternatives like Tofutti or Kite Hill.
  • 1/3 cup Cotija Cheese Feta works as a substitute.
  • 1 unit Lime Freshly squeezed preferred.
  • 2 cloves Garlic Minced, jarred can be used.
  • 1/2 tsp Chili Powder Chipotle or cayenne can be used for more heat.
  • 1/2 tsp Smoked Paprika Adds smokiness.
  • 1/2 tsp Onion Powder
  • to taste Fresh Cilantro Optional.

Method
 

Preparation
  1. Place the boneless chicken into the bottom of your slow cooker.
  2. Add the corn on top of the chicken.
  3. Soften the cream cheese in the microwave if necessary, and spread it over the corn and chicken.
  4. Sprinkle the Cotija cheese, then add the lime juice, minced garlic, chili powder, smoked paprika, and onion powder.
Slow Cook
  1. Cover the slow cooker and cook on low for about 4-6 hours or until the chicken is cooked through and tender.
  2. Check for doneness after 4 hours if using chicken breasts.
Shred Chicken
  1. Once cooked, use two forks to shred the chicken right in the slow cooker.
  2. Stir everything together to combine all the flavors.

Notes

Serve warm with tortillas, rice, or on its own. Top with fresh cilantro for added flavor. For extra smokiness, add more smoked paprika or some chopped chipotle peppers. To make this dish vegan, substitute chicken with tofu and use vegan cream cheese and cheeses. Use frozen or fresh corn based on preference for convenience or flavor.
