Ingredients
  

Main Ingredients
  • 1 lb ground beef or turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 bell peppers, chopped
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups beef or vegetable broth
  • 1 cup uncooked rice
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Method
 

Cook the Meat & Aromatics
  1. In a large pot, brown the ground beef or turkey over medium heat. Add chopped onion and garlic, cooking until softened and fragrant.
Add Vegetables & Simmer
  1. Stir in the chopped bell peppers and cook for about 5 minutes. Add diced tomatoes, broth, rice, Italian seasoning, salt, and pepper. Bring to a boil, then cover and simmer for 20–25 minutes, until the rice is tender.
Finish & Serve
  1. Once the rice is cooked and the mixture has thickened slightly, serve hot, garnished with your favorite toppings such as fresh herbs, cheese, or a drizzle of olive oil.

Notes

This soup can be customized with your favorite vegetables, such as corn or zucchini. For additional flavor, try adding some chili powder, cumin, or crushed red pepper.
