  • 1 cup pineapple chunks (canned or fresh)
  • 1 cup barbecue sauce
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger (fresh or ground)
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Method
 

Preparation
  1. Place the chicken breasts in the slow cooker.
  2. In a bowl, mix the pineapple chunks, barbecue sauce, soy sauce, brown sugar, garlic powder, and ginger.
Cooking
  1. Pour the sauce mixture over the chicken.
  2. Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender and fully cooked.
Serving
  1. Serve the chicken and sauce over rice, garnished with sliced green onions if desired.

Notes

For extra flavor, marinate the chicken in the sauce for a few hours before cooking. Add diced bell peppers or onions for more veggies. Adjust the sweetness by changing the amount of brown sugar. This dish can be served over rice, steamed vegetables, or in a tortilla.
