  • 4 cups mixed vegetables (like carrots, bell peppers, and zucchini)
  • 1 can diced tomatoes (without added sugars)
Seasonings
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika

Method
 

Preparation
  1. Place the chicken in the bottom of the crockpot.
  2. Add the mixed vegetables and pour the diced tomatoes over the top.
  3. Sprinkle with garlic powder, onion powder, paprika, salt, and pepper.
Cooking
  1. Cover and cook on low for 6–8 hours or high for 3–4 hours, until the chicken is tender and fully cooked.
Finishing Touches
  1. Shred the chicken with two forks, stir everything together, and garnish with fresh herbs before serving.

Notes

Serve warm on its own or over a bed of greens. Pairs well with avocado for added healthy fats.
