Ingredients
  

For the apple filling
  • 6 medium medium apples (Granny Smith or Honeycrisp) Use firm apples.
  • ¾ cup granulated sugar Can reduce slightly.
  • 2 tablespoons all-purpose flour
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon Can substitute with apple pie spice.
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt
  • 2 tablespoons butter (cut into small pieces) Dot over apples.
For the topping
  • 1 cup all-purpose flour Can swap for gluten-free flour.
  • ½ cup granulated sugar
  • ¼ cup brown sugar (packed)
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 6 tablespoons cold butter (cubed)
  • ¼ cup boiling water

Method
 

Preparation
  1. Preheat oven to 375°F (190°C).
  2. Peel, core, and slice apples.
  3. Toss apples with sugar, flour, lemon juice, cinnamon, nutmeg, and salt.
  4. Spread into a greased 9x9 baking dish and dot with butter.
Make the topping
  1. In a bowl, mix flour, sugars, baking powder, and salt.
  2. Cut in cold butter until crumbly.
  3. Stir in vanilla and boiling water just until combined.
Bake
  1. Drop spoonfuls of topping over the apples (it doesn’t need to fully cover).
  2. Bake for 45-50 minutes until the top is golden and the filling is bubbling.
  3. Let cool for 15 minutes before serving.

Notes

Serve warm with vanilla ice cream, whipped cream, or caramel sauce. Let it cool completely before storing in the refrigerator for up to 4-5 days.
