Preparation
- Preheat oven to 350°F (175°C). In a mixing bowl, mash ripe bananas until smooth.
- Add rolled oats, honey or maple syrup, eggs, baking powder, and vanilla extract, then stir until everything is combined evenly.
Baking
- Grease an 8×8-inch baking dish or line it with parchment paper. Pour the banana-oat mixture into the dish and spread it evenly.
- Bake for 25–30 minutes, until golden brown on top.
Cooling and Serving
- Let the baked mixture cool for at least 10 minutes before slicing into squares.
- Serve warm or at room temperature, optionally topped with yogurt, nut butter, or fresh fruit.
Notes
Feel free to customize by adding nuts, seeds, or dried fruit for extra texture. Use quick oats for denser bars. Ensure bananas are very ripe for optimal sweetness. Store in an airtight container for up to 3 days or refrigerate for a week; freeze for up to 3 months.
