  • 1 tablespoon maple syrup (optional) Can substitute with honey or agave syrup.
  • 1/2 teaspoon vanilla extract
  • Fresh fruit for topping Top with any fruit as desired.

Preparation
  1. In a bowl, combine chia seeds, almond milk, maple syrup, and vanilla extract. Stir thoroughly to mix.
  2. Let the mixture sit for 5 minutes, then stir again to break up any clumps. Cover and refrigerate for at least 2 hours or overnight until thickened.
  3. Give the pudding a final stir before serving and top with fresh fruit as desired.

Notes

Chia seed pudding can be served chilled directly from the fridge. You can layer it in a glass with some fruit or nuts for added texture. Adjust the sweetness to your liking by changing the amount of sweetener used.
