Ingredients
  

Potatoes and Soaking
  • 4 large large russet potatoes
  • water Cold water (for soaking)
  • 2 tablespoons salt (for soaking water)
Oil for Frying
  • Peanut oil, canola oil, or vegetable oil (for frying)
Seasoning
  • 1.5 teaspoons salt (or to taste)
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon paprika
  • 0.125 teaspoon garlic powder
  • 1 pinch sugar (optional, for balance)

Method
 

Preparation
  1. Scrub the potatoes and cut them into waffle slices using a mandoline with a waffle blade, rotating the potato 90° between slices.
  2. Soak the cut potatoes in cold salted water for at least 20 minutes.
  3. Drain, rinse, and pat the potatoes very dry.
Frying
  1. Heat the oil to 325°F (163°C).
  2. Fry the potato slices in small batches for 3-4 minutes until soft but still pale, then remove to a rack or paper towels.
  3. Raise the oil temperature to 375°F (190°C) and fry again for 2-3 minutes until golden and crisp.
  4. Drain the fries and season immediately while hot. Serve right away.

Notes

Pat the potatoes very dry before frying to help with crispiness and reduce splatter. Fry in small batches to keep the oil hot. Season immediately after frying for best results.
