  • 3 cups all-purpose flour
  • 1.25 teaspoons salt
  • 0.25 teaspoons active dry yeast
  • 1.5 cups warm water

Method
 

Mix the Dough
  1. In a large bowl, mix flour, salt, and yeast.
  2. Pour in warm water and stir until a rough dough forms.
  3. Cover the bowl and let it rest at room temperature for 12–18 hours.
Shape and Rest
  1. Place the dough onto a floured surface.
  2. Fold it over itself once or twice, then shape into a loose ball.
  3. Place on parchment paper, cover, and let rise for 1–2 hours.
Bake
  1. Preheat the oven to 450°F (232°C) with the Dutch oven inside for 30 minutes.
  2. Carefully lift the dough (with parchment) into the hot pot.
  3. Cover and bake for 30 minutes, then uncover and bake for an additional 15 minutes until deep golden brown.

Notes

Let the bread cool completely before slicing to avoid a gummy texture. For best results, follow all resting and preheating instructions.
