Ingredients

Granola Base
  • 3/4 cup oats Use rolled or quick oats.
  • 1/2 tsp cinnamon
  • 1/4 cup almond butter Can be substituted with other nut butters.
  • 3-4 tbsp honey Adjust based on desired sweetness.
  • 1 tsp vanilla extract
Yogurt and Toppings
  • 1 1/2 cups Greek yogurt Dairy-free option can be used, like coconut yogurt.
  • Berries of choice Use fresh berries or other fruits like bananas or mango.

Method

Make the Granola Base
  1. In a bowl, mix oats, cinnamon, almond butter, honey, and vanilla extract until a sticky dough forms. If too dry, add a little more almond butter and honey.
Assemble Cups
  1. Line a muffin pan with liners. Add a spoonful of the granola mixture to each cup and press firmly to form a solid base.
  2. Top with a spoonful of yogurt and fresh berries, adding any leftover granola on top.
Freeze & Serve
  1. Freeze for at least 4 hours until firm. Let thaw for a few minutes before serving for the best texture.

Notes

Store in an airtight container in the freezer for up to a month, separating layers with parchment paper to prevent sticking. Adjust sweetness and experiment with different nut butters for variety.
