Roasting the Sweet Potatoes
- Preheat oven to 400°F (200°C). Toss diced sweet potatoes with 1 tbsp olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread on a baking sheet and roast for 40–45 minutes, stirring halfway through.
Cooking the Beef
- In a skillet, heat the remaining olive oil. Add diced onion and cook until softened. Stir in the ground beef, season with taco mix, and cook until browned and flavorful.
Assembling the Bowls
- Layer roasted sweet potatoes, ground beef, sliced avocado, and cottage cheese in each bowl. Drizzle with hot honey and garnish with cilantro, red pepper flakes, and lime wedges if desired.
Notes
For extra flavor, consider marinating the ground beef in the taco seasoning for 30 minutes before cooking. You can swap out the sweet potatoes for other roasted vegetables like butternut squash or carrots. Adjust the amount of hot honey based on your spice preference.
