Ingredients
  

Meatloaf Base
  • 2 pounds ground beef
  • 1 cup breadcrumbs
  • 1 egg
  • ½ cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
Vegetables
  • 1 green bell pepper, diced
  • 1 small onion, diced
Toppings
  • 1 tablespoon olive oil for sautéing
  • 8 slices provolone cheese 4 for filling, 4 for topping
Garnish
  • fresh parsley, chopped

Method
 

Preparation
  1. Preheat oven to 375°F (190°C). In a skillet, heat olive oil over medium heat and sauté peppers and onions for about 5 minutes, until softened. Set aside to cool slightly.
Assembly
  1. In a large bowl, combine ground beef, breadcrumbs, egg, milk, Worcestershire sauce, garlic powder, salt, and pepper. Press half the meat mixture into a loaf pan, layer with 4 slices of provolone, then add the sautéed peppers and onions. Cover with the remaining meat, pressing to seal the edges.
Baking
  1. Bake for 45–50 minutes. In the last 5 minutes, place the remaining 4 slices of provolone on top and bake until melted.
  2. Let rest for 5–10 minutes, then garnish with parsley and serve warm.

Notes

For a spicier kick, add diced jalapeños or red pepper flakes to the meat mixture. You can also customize the cheese choice.
