Ingredients
  

Egg Mixture
  • 3 units eggs
Cheese and Toppings
  • 60 g reduced-fat cheese, grated approx. 2 oz
  • 1 tbsp passata about 15g
  • 20 g salami approx. a few slices
  • Mixed herbs to top

Method
 

Cooking the Eggs
  1. Heat a non-stick frying pan over medium heat. Sprinkle half the grated cheese evenly across the pan and let it melt and crisp slightly.
  2. Meanwhile, whisk the eggs until smooth, then pour them over the melted cheese. Cover with a lid and cook until the bottom is firm and golden.
Adding Toppings
  1. Carefully flip the egg-cheese base using a spatula.
  2. Spread passata over the top, then add salami slices and the remaining cheese. Cover again and cook until the cheese melts and the toppings are heated through.
Serving
  1. Remove the dish from the pan, sprinkle with mixed herbs, and serve immediately for a crisp, cheesy, pizza-style breakfast or snack.

Notes

Feel free to swap out salami for your choice of protein, like ham, turkey, or even veggies. Experiment with different cheese varieties for unique flavor. Add toppings like olives, bell peppers, or spinach to pack in more nutrients. For a vegetarian version, simply omit the salami and add more vegetables like diced bell peppers, mushrooms, or onions for added nutrition and flavor. Pizza Eggs are best served hot straight from the pan. Store leftovers in an airtight container in the refrigerator for up to 2 days.
