Ingredients
  

Base
  • cups cottage cheese (full-fat or 2% for best texture)
  • 1 tablespoon olive oil (savory) or honey (sweet) Use olive oil for savory version or honey for sweet version.
  • ½ teaspoon salt (savory) or vanilla extract (sweet) Use salt for savory version or vanilla extract for sweet version.
Savory Topping (most popular)
  • 1 cup cherry tomatoes, halved
  • 1 small cucumber, diced
  • 2 tablespoons chopped kalamata olives
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano (or fresh herbs)
  • black pepper or chili flakes (optional) To taste.
Sweet Topping
  • ½ cup berries
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon granola or nuts
  • cinnamon (optional) To taste.

Method
 

Preparation
  1. Add cottage cheese to a blender or food processor. Blend for 30–45 seconds until completely smooth and creamy.
  2. For savory: blend in olive oil and salt.
  3. For sweet: blend in honey and vanilla.
  4. Spoon into a bowl and add your toppings. Serve immediately or chill for 15 minutes for a thicker texture.

Notes

Store the whipped base in an airtight container in the refrigerator for up to 3–4 days. If it thickens, stir in 1–2 teaspoons of milk or water. Add fresh toppings just before serving.
